Yellowfin tuna or light tuna (Thunnus albacares) is a type of tuna found in the open waters of tropical and subtropical seas throughout the world. Its size can reach 239 cm in length and 200 kg in weight.

Albacore / White tuna
Albacore tuna, or White tuna, is a long-finned fish that is distinguished by a dark blue back and silvery-white sides and belly. Adult albacore tuna have pectoral fins that extend beyond the second dorsal fin and the anal fin. Its flesh is pink when raw and whitish when cooked. Mature albacore tuna can reach up to 45 kg (100 pounds), although the average weight in the market is 9 kg (20 pounds).

Skipjack tuna
Typically oceanic, Skipjack tuna is found especially in tropical and subtropical waters around the world, although more commonly in tropical Pacific waters. It can reach a maximum size of 1 m and 19 kg in weight.

It has speckles on its deep blue-green back and also on its silver sides. Its red meat is the most intense in tone among the 5 species of Pacific salmon. It reaches an average weight of 2.7kg and can range between 1 and 4kg.

Oncorhynchus keta
It is the second largest salmon after the Chinook, the large individuals have a metallic blue back with black spots, patterned on the side and silver-white on the belly, however, when mature salmon enter the spawning phase and they return to the river their appearance changes drastically towards black and tabby stripes. The color of its flesh is reddish pink. Average weight of about 3.5 kg.
